Time for Asparagus

Spring is here and so is asparagus! I am embarrassed to say this, but in the not so distant past, I was clueless about the growing season of most fruits and vegetables. I know fall is when I hit the apple orchard and pumpkin patch, but beyond that why pay attention when I get most fruits and vegetables my family eats in the grocery store whenever I want.

But here is the deal; besides the fruits and vegetables being expensive off season, they taste horrible and have no nutritional value. The vital phytochemicals go into the fruit and vegetable the last 24-48 hours they are ripened. When we choose to purchase produce that is out of season for our area, the produce must be shipped from a great distance. Because it is shipped such a great distance, it must be picked before it is ripe to prevent rotting. Get the picture? The produce has minimal nutrients beyond fiber!

This is why choosing home-cooked meals from whole, in-season ingredients obtained from the most local source available is eating well, in every sense.The main barrier standing between ourselves and a local-food culture is not price, but attitude. We need to be patient for the right season of produce and stop seeking instant gratification as society seems to do in all aspects of life. Now I'll jump off my soapbox!

Asparagus dates back to early times used not only as a vegetable, but also medicine due to is diuretic properties. It is a good source of vitamin B6, A, C, and E and minerals as well as fiber. It is in season from the end of March to June. I love to eat asparagus roasted with a little olive oil and sea salt, try them out!
